Beef n Shrimp Fried Rice

- 3 cups cooked long-grain rice shopping list
- 2 Tblspn peanut oil shopping list
- 2 eggs - beaten shopping list
- 500 g medium uncooked prawns shopping list
- 500 g beef cut into thin strips - round, rib eye or sirloin steak are good shopping list
- 1 tsp sesame oil shopping list
- 1 medium onion - sliced shopping list
- 2 cloves garlic - crushed & chopped shopping list
- 2 tsp finely grated fresh ginger shopping list
- 1 medium carrot - thinly sliced shopping list
- 1 cup frozen peas - thawed shopping list
- 1 can whole kernal corn - drained shopping list
- 4 green onions - sliced shopping list
- 1 1/2 Tblspn soy sauce shopping list
How to make it
- Cook rice several hours ahead of time & spread out over a shallow pan. Place covered, in the fridge until ready to use.
- Heat 1 tsp of the oil in a wok or large pan
- Add half the beaten egg, swirl the wok so the eggs form a thin omelette. Cook until set
- Transfer omelette to cutting board, roll tightly & cut into thin strips
- Repeat with 1 tsp of the oil & the rest of the eggs - set aside
- Shell & devein prawns, leaving the tails intact
- Heat 1/2 the remaining oil in wok
- Stir fry beef strips in batches, until browned & just cooked
- Remove from wok
- Heat remaining peanut oil & sesame oil in wok
- Add onion, garlic, ginger & carrot & stir-fry until the vegetables are just tender
- Add prawns & stir-fry until just cooked
- Add rice, omelette strips, beef, peas, corn, green onions & soy sauce
- Stir-fry until heated through
