Ingredients
  • 3 cups cooked long-grain rice
  • 2 Tblspn peanut oil
  • 2 eggs - beaten
  • 500 g medium uncooked prawns
  • 500 g beef cut into thin strips - round, rib eye or sirloin steak are good
  • 1 tsp sesame oil
  • 1 medium onion - sliced
  • 2 cloves garlic - crushed & chopped
  • 2 tsp finely grated fresh ginger
  • 1 medium carrot - thinly sliced
  • 1 cup frozen peas - thawed
  • 1 can whole kernal corn - drained
  • 4 green onions - sliced
  • 1 1/2 Tblspn soy sauce

Directions
  1. Cook rice several hours ahead of time & spread out over a shallow pan. Place covered, in the fridge until ready to use.
  2. Heat 1 tsp of the oil in a wok or large pan
  3. Add half the beaten egg, swirl the wok so the eggs form a thin omelette. Cook until set
  4. Transfer omelette to cutting board, roll tightly & cut into thin strips
  5. Repeat with 1 tsp of the oil & the rest of the eggs - set aside
  6. Shell & devein prawns, leaving the tails intact
  7. Heat 1/2 the remaining oil in wok
  8. Stir fry beef strips in batches, until browned & just cooked
  9. Remove from wok
  10. Heat remaining peanut oil & sesame oil in wok
  11. Add onion, garlic, ginger & carrot & stir-fry until the vegetables are just tender
  12. Add prawns & stir-fry until just cooked
  13. Add rice, omelette strips, beef, peas, corn, green onions & soy sauce
  14. Stir-fry until heated through
