How to make it

  • Cook rice several hours ahead of time & spread out over a shallow pan. Place covered, in the fridge until ready to use.
  • Heat 1 tsp of the oil in a wok or large pan
  • Add half the beaten egg, swirl the wok so the eggs form a thin omelette. Cook until set
  • Transfer omelette to cutting board, roll tightly & cut into thin strips
  • Repeat with 1 tsp of the oil & the rest of the eggs - set aside
  • Shell & devein prawns, leaving the tails intact
  • Heat 1/2 the remaining oil in wok
  • Stir fry beef strips in batches, until browned & just cooked
  • Remove from wok
  • Heat remaining peanut oil & sesame oil in wok
  • Add onion, garlic, ginger & carrot & stir-fry until the vegetables are just tender
  • Add prawns & stir-fry until just cooked
  • Add rice, omelette strips, beef, peas, corn, green onions & soy sauce
  • Stir-fry until heated through
