How to make it

  • Heat the butter in a large size sauce pan over medium heat. Sauté the celery and the onion for approximately 3 minutes and then add the bell pepper. Cook it for another minute.
  • Next, stir in the flour a little at a time until it is blended in with the vegetable mixture. Add the chicken broth in and stir in to blend.
  • Add your diced up potato and bring all to a boil. Then reduce the heat and cover the mixture and simmer it for approximately 15 minutes or until the potato is slightly tender.
  • Add the asparagus and the cooked chicken and cook until the asparagus can easily be pierced by a knife or fork.
  • Add the cream and the salt and pepper.
  • Stir in the parsley.
  • Serve immediately and enjoy with salad, bread or a sandwich. Delicious!

    I have recently fallen in love with asparagus again (my ex didn't like it, so ... ) and I love this recipe. My mom used to tell us that a good bowl of soup was like a hug from the inside! Thanks for this recipe
