PACIFIC PAN ROASTED OYSTERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lanier Estate in Crandall, Texas in 1982.

Ingredients
  • 1 cup fresh medium oysters
  • 3 eggs slightly beaten
  • 1/2 cup flour
  • 1/2 cup fine bread crumbs
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 4 teaspoons water
  • 2 teaspoons freshly ground black pepper
  • Sauce:
  • 1/2 cup catsup
  • 1 tablespoon horseradish
  • 1 tablespoon lemon juice
  • 1 tablespoon Worcestershire

Directions
  1. Heat oil in large cast-iron or heavy skillet over medium heat.
  2. Mix flour, salt and pepper.
  3. Mix eggs and water.
  4. Dip each oyster in flour then egg mixture then bread crumbs before putting in skillet.
  5. Cook approximately 3 minutes per side.
  6. Combine catsup, horseradish, lemon juice and Worcestershire and mix well.
  7. Serve oysters hot with sauce.
