How to make it

  • Cook pasta in boiling water with EVOO and kosher salt
  • When done, (cuts easy against side of pan with a spoon), pour into colander and drain and RINSE well
  • Rinse all that starch residue from pan
  • Return pasta to pan
  • Add milk, about 1/4 way up to top of pasta
  • Add butter
  • Return pan to med heat
  • When butter starts to melt, start tearing cheese and adding, stirring every few pieces
  • It will look soupy as the cheese melts, but will thicken quite a bit as it stands
  • Adjust thickness with cheese or milk as needed
  • Top wtih fresh ground black peper
  • This is extremely creamy and cheesey. Does not need cream, half and half, flour, popped in the oven, etc. Just ooey, gooey, creamy cheesey mac n cheese.
  • Enjoy!
