Ingredients

1 small box jumbo elbow macaroni

1 T EVOO

2 T Kosher salt

1/4 stick margarine or butter

2 % milk

4 slices american cheese

1/2 c parmesan

8 slices swiss cheese

fresh ground black pepper

Directions

Cook pasta in boiling water with EVOO and kosher salt

When done, (cuts easy against side of pan with a spoon), pour into colander and drain and RINSE well

Rinse all that starch residue from pan

Return pasta to pan

Add milk, about 1/4 way up to top of pasta

Add butter

Return pan to med heat

When butter starts to melt, start tearing cheese and adding, stirring every few pieces

It will look soupy as the cheese melts, but will thicken quite a bit as it stands

Adjust thickness with cheese or milk as needed

Top wtih fresh ground black peper

This is extremely creamy and cheesey. Does not need cream, half and half, flour, popped in the oven, etc. Just ooey, gooey, creamy cheesey mac n cheese.
