Beetroot Walnut Sauce

- 2 very small beetroot (or 1 of the medium). Peeled, and chucked. shopping list
- 2 tablespoon butter shopping list
- 2 clove of garlic, chopped shopping list
- 1 tablespoon shallots, chopped shopping list
- a handful walnut, chopped shopping list
- 1/4 or 1/3 cup fruity white wine shopping list
- some water shopping list
- 2 pinch of ground nutmeg shopping list
- 2 tablespoon heavy/double cream shopping list
- 2 tablespoon ground parmigiano shopping list
- salt and pepper shopping list
How to make it
- 1 Pre-heat a skillet, add butter, saute garlic, shallots and walnut over very low heat, for about 3 minutes, but don't let anything get burn.
- 2 Raise up the heat and saute the beetroot for 3 minutes, add wine, continue for another 2 minutes.
- 3 Puree with some water. aim for sauce-like consistency.
- 4 Return the puree to the skillet, simmer it for about 5 minutes. Salt and pepper to taste, add 2 pinch of nutmeg.
- ( I Serve this over Fresh Pasta such as Parpadelle or stirred in to Risotto.)
