Ingredients
  • 2 very small beetroot (or 1 of the medium). Peeled, and chucked.
  • 2 tablespoon butter
  • 2 clove of garlic, chopped
  • 1 tablespoon shallots, chopped
  • a handful walnut, chopped
  • 1/4 or 1/3 cup fruity white wine
  • some water
  • 2 pinch of ground nutmeg
  • 2 tablespoon heavy/double cream
  • 2 tablespoon ground parmigiano
  • salt and pepper

Directions
  1. 1 Pre-heat a skillet, add butter, saute garlic, shallots and walnut over very low heat, for about 3 minutes, but don't let anything get burn.
  2. 2 Raise up the heat and saute the beetroot for 3 minutes, add wine, continue for another 2 minutes.
  3. 3 Puree with some water. aim for sauce-like consistency.
  4. 4 Return the puree to the skillet, simmer it for about 5 minutes. Salt and pepper to taste, add 2 pinch of nutmeg.
  5. ( I Serve this over Fresh Pasta such as Parpadelle or stirred in to Risotto.)
