Ingredients
  • 4 - 10 inch tortillas
  • 1 cup grated cheddar cheese
  • 1 tsp groung hot paprika
  • 3/4 cup sour cream
  • 1 Tblspn chopped fresh coriander leaves
  • .
  • Beef Filling:-
  • 1 Tblspn olive oil
  • 500 g lean ground beef
  • 1 medium onion - finely chopped
  • 1 clove garlic - crushed & chopped
  • 1 fresh jalapeno pepper - finely chopped. Remove the seeds if you like a little less heat
  • 400 g can tomatoes
  • 35 g pkg Taco seasoning mix
  • 1/2 cup water
  • 300 g can red kidney beans - rinsed & drained

  • Guacamole:-
  • 1 large avocado
  • 1 baby onion - finely chopped
  • 2 tsp lemon juice
  • few drops Tabasco
  • 1 small tomato - finely chopped

Directions
  1. Beef Filling:-
  2. Heat olive oil in a medium pan
  3. Add ground beef, onion & garlic
  4. Cook, stirring until beef is browned & onion is soft
  5. Add undrained, crushed tomatoes & remaining filling ingredients
  6. Simmer, uncovered, about 15 mins or until mixture thickens
  7. Cool
  8. .
  9. Guacamole:-
  10. Remove avocado flesh from peal & place in medium bowl
  11. Mash with fork
  12. Stir in remaining ingredients
  13. .
  14. To Assemble burritos:-
  15. Reheat beef filling to warm
  16. Lay out tortillas & divide meat filling among them
  17. Roll up tortillas & secure with toothpick
  18. Place on greased baking pan
  19. Sprinkle with cheese
  20. Bake in 400 degree oven for about 10 mins or until heated through
  21. Serve Burritos topped with Guacamole, sour cream & chopped coriander leaves
