Pork In White Wine And Dijon Mustard Recipe
French way to do thick porc chops. Make it your bistro specialty.

Ingredients
  • 4 thick pork chops, may be French cut
  • 1 tbsp olive oil
  • 1 tbsp butter
  • small onion diced pretty small
  • 1 tsp flour
  • 1/2 cup dry white wine
  • 1 cup strong chicken or veal stock or broth
  • 2 tbsp dijon mustard
  • 10 cornichons (tiny French/bistro pickle) thinly sliced
  • bit of parsley, pretty finely chopped
  • YOU"LL NEED:
  • A sautee pan you can transfer into the hot oven
  • Tongs
  • Whisk
  • Serving Plate
  • (Mashed Potatoes go good)

Directions
  1. Preheat oven to 375
  2. Put oil in hot pan
  3. Melt butter in this pan
  4. Sautee chops 4 mins. each side or until golden brown
  5. Put this same pan in 375 degree oven for 8 mins.
  6. Rest chops on a platter covered loosely with foil
  7. Throw onions in the original pan you 've taken out of the oven
  8. And return pan to high heat on stove: REMEMBER YOUR OVEN MITTS
  9. Add flour, whisk and cook for 1 min
  10. Add wine, reduce by half
  11. Add stock, reduce by half or to a sticky yummy sauce
  12. Take pan off heat and whisk in mustard, parsley , cornichons and any juice that has accumulated under the porc chops
  13. Serve those babies. Potatoes or rice in nice. You'll know what to do!
