  • Cake Balls are made of crumbled cake mixed with icing, then frozen and coated with a candy shell.
  • 1 18.25-ounce boxed cake mix, plus ingredients called for on the box.
  • 1 16-ounce can frosting.
  • 48-ounce bag of confectioners' coating wafers. I use Wilton candy melts.

Directions
  1. Bake the cake according to the package instructions. Crumble the warm cake into a bowl, using a hand mixer to create a fine texture. Mix in the frosting to make a paste (3/4 to full can). Chill the mixture for at least 2 hours. Form the mixture into 1 1/2-inch balls, place on waxed paper and freeze for at least 6 hours.
  2. Melt the candy coating in a microwave oven set on high for 45 seconds. Stir the coating, then heat in 10-second bursts, stirring between each until smooth. Working in small batches, remove the balls from the freezer, dip them into melted coating using toothpicks or a dipping fork. Place each on a sheet of waxed paper to harden.
  3. For a softer coating use only half the icing for the cake mixture and use the other half of the icing to mix in with the melted melts. This is extra delicious. It's like a fudge coating.
  4. Makes 30 balls.
