Mandarin Cointreau Cake

- 4- eggs shopping list
- 3/4- cup caster sugar shopping list
- 2- tablespoons plain flour shopping list
- 1/3 - cup self rising flour shopping list
- 1/2- cup custard powder shopping list
- 1/3- cup ground almonds shopping list
- 2- tablespoons finely grated mandarin rind shopping list
- Filling……………. shopping list
- 3- egg yolks shopping list
- 1/2 - cup caster sugar shopping list
- 3- tablespoons corn flour shopping list
- 2- tablespoons Cointreau shopping list
- 1 - cup evaporated milk shopping list
- 1/3 - cup double cream …..whipped shopping list
- 3/4 - cup melted apricot jam shopping list
- Topping shopping list
- 1- cup double cream .whipped shopping list
- ¾- cup canned mandarin segments drained shopping list
How to make it
- Beat eggs with a mixer until thick
- Gradually add sugar and beat for a further 3 minutes.
- Fold in combined plain flour, self rising flour, custard powder, almonds and rind.
- Pour mixture into a greased and lined 8 3/4 inch ( 22cm) round cake pan………….
- Bake in a moderate oven 350 degrees - for 30 minutes……
- Turn onto a wire rack to cool completely…….
- To make the filling……….
- Combine egg yolks, caster sugar,cornflour and cointreau in a medium saucepan, gradually stir in evaporated milk……..stir until filling boils and thickens.
- Cool to room temperture, stir in whipped cream until combined…..
- Cut cake into 3 layers
- Spread layers with apricot jam , then sandwich with the filling and cover sides and top of cake with whipped cream
- Decorate with the mandarin orange segments..
- Serves 8
