Ingredients

How to make it

  • Beat eggs with a mixer until thick
  • Gradually add sugar and beat for a further 3 minutes.
  • Fold in combined plain flour, self rising flour, custard powder, almonds and rind.
  • Pour mixture into a greased and lined 8 3/4 inch ( 22cm) round cake pan………….
  • Bake in a moderate oven 350 degrees - for 30 minutes……
  • Turn onto a wire rack to cool completely…….
  • To make the filling……….
  • Combine egg yolks, caster sugar,cornflour and cointreau in a medium saucepan, gradually stir in evaporated milk……..stir until filling boils and thickens.
  • Cool to room temperture, stir in whipped cream until combined…..
  • Cut cake into 3 layers
  • Spread layers with apricot jam , then sandwich with the filling and cover sides and top of cake with whipped cream
  • Decorate with the mandarin orange segments..
  • Serves 8

    OK DONNA HERE YOU GO ...CUSTARD POWDER IS ACTUALLY A CUSTARD WHICH IS DRIED IT HAS CORNSTARCH IN IT THERES A BRAND CALLED "BIRDS "IT COMES IN A JAR ITS JUST CALLED CUSTARD POWDER.......
