How to make it

  • 1. Heat oven to 350°F. Lightly grease cookie sheet.
  • 2. Beat butter, brown sugar, lemon peel and vanilla extract in large bowl until light and fluffy. Add eggs; beat well. Stir together flour, baking soda and salt; add to butter mixture. Stir in white chips and pecans, if desired. Drop by tablespoons onto prepared cookie sheet.
  • 3. Bake 8 to 10 minutes or until almost set. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 2-1/2 dozen cookies.

    The number of eggs and the amount of flour used in this recipe is a bit off. There should only be one egg, otherwise the cookies rise too much and have a cake-like texture which is not desirable to me or my family anyway....the amount of flour should be bumped up to 2 cups as well. The batter isn't as runny and the cookies come out denser and chewier. I also added a teaspoon of fresh lemon juice to the batter for a bit of extra lemon flavour.
