Fried Eggplant With Cheese - Peynirli Patlican Kizartmasi

- 2 med eggplants, slice skin in alternating strips and slice in 1/2 inch slices shopping list
- 1 cup halloumi cheese or Mozzarella, grated shopping list
- 1 tbsp corn starch shopping list
- 1 tsp mint shopping list
- 1/4 cup dill, chopped shopping list
- 1 egg shopping list
- olive oil for frying shopping list
How to make it
- Soak the eggplants in 2 cups of salted water for 20 minutes.
- Squeeze and dry them with a paper towel.
- Mix all the filling ingredients in a small bowl.
- Take a spoonful and place on one side of an eggplant slice, keep it in a half ball shape.
- Heat the oil in a skillet over medium-high heat.
- Fry the filling side until nicely colored.
- turn and fry the other side.
- Place on a kitchen towel to soak up extra oil.
- Serve while still warm
