This is a moist rich cake that is beautiful for a special occasion. Add some baking sparkles to the top before glaze cools to add pizzazz

  • INGREDIENTS FOR THE CAKE
  • 1 cup chopped pecans or walnuts
  • 1 18 ½ oz box yellow cake mix (Duncan Hines)
  • 1 1-3/4 oz box Jello instant vanilla pudding mix
  • 4 eggs
  • ½ cup cold water
  • ½ cup Wesson oil
  • ½ cup Bacardi dark rum (80 proof) or Amaretto
  • INGREDIENTS FOR GLAZE
  • ¼ lb. Butter
  • ¼ cup water
  • 1 cup granulated sugar
  • 1 cup (or more) Bacardi rum or Amaretto

Directions
  1. Preheat oven to 325 degrees.
  2. Grease and flour 10” tube or 12” bundt pan
  3. Sprinkle chopped nuts over bottom of pan
  4. Mix all cake ingredients together
  5. Pour cake batter over nuts
  6. Bake 1 hour and put out to cool…not too long
  7. While cooling, make glaze:
  8. Melt butter in sauce pan
  9. Stir in water and sugar
  10. Boil 5 minutes, stirring constantly (till slightly thickened)
  11. Remove from heat and stir in rum or Amaretto
  12. After cake cools, invert on serving tray or plate
  13. Prick holes into top of cake (many)…I use a cake tester
  14. Drizzle and smooth the glaze over the top and sides of cake
  15. Allow cake to absorb glaze and keep repeating until all glaze is gone.
  16. Decorate aound the bottom edge of cake with fresh blackberries.

This is the BEST "5"FORK!!!!! RUM CAKE EVER ~
The only thing that I do differently is that I
do not use the nuts ~
My Brother, says that this Rum Cake could
"walk off of the table by itself" with all
the RUM that is in it !!! (^_^) !
