Rum Cake

- INGREDIENTS FOR THE cake shopping list
- 1 cup chopped pecans or walnuts shopping list
- 1 18 ½ oz box yellow cake mix (Duncan Hines) shopping list
- 1 1-3/4 oz box Jello instant vanilla pudding mix shopping list
- 4 eggs shopping list
- ½ cup cold water shopping list
- ½ cup Wesson Oil shopping list
- ½ cup Bacardi dark rum (80 proof) or Amaretto shopping list
- INGREDIENTS FOR glaze shopping list
- ¼ lb. butter shopping list
- ¼ cup water shopping list
- 1 cup granulated sugar shopping list
- 1 cup (or more) Bacardi rum or Amaretto shopping list
How to make it
- Preheat oven to 325 degrees.
- Grease and flour 10” tube or 12” bundt pan
- Sprinkle chopped nuts over bottom of pan
- Mix all cake ingredients together
- Pour cake batter over nuts
- Bake 1 hour and put out to cool…not too long
- While cooling, make glaze:
- Melt butter in sauce pan
- Stir in water and sugar
- Boil 5 minutes, stirring constantly (till slightly thickened)
- Remove from heat and stir in rum or Amaretto
- After cake cools, invert on serving tray or plate
- Prick holes into top of cake (many)…I use a cake tester
- Drizzle and smooth the glaze over the top and sides of cake
- Allow cake to absorb glaze and keep repeating until all glaze is gone.
- Decorate aound the bottom edge of cake with fresh blackberries.
