Honey Nut Cake in Soaking Syrup

- 3/4 cup white sugar shopping list
- 1/4 cup brown sugar shopping list
- 1/4 cup oil shopping list
- 3 eggs shopping list
- 3 tablespoons orange juice shopping list
- 1 teaspoon orange zest finely minced shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon cinnamon shopping list
- 1/2 cup matzo cake meal shopping list
- 1/2 cup finely chopped hazelnuts or almonds shopping list
- 1 cup finely chopped walnuts shopping list
- Soaking syrup: shopping list
- 2/3 cup sugar shopping list
- 1/4 cup honey shopping list
- 1/3 cup orange juice shopping list
- 1/4 cup water shopping list
- 1 tablespoon lemon juice shopping list
- 1/4 teaspoon cinnamon shopping list
How to make it
- Preheat oven to 350 then generously grease round layer cake pan.
- In a medium mixing bowl using a wire whisk beat sugar, oil and eggs.
- Beat well until mixture is thick and a pale yellow.
- Stir in orange juice, zest, salt, cinnamon, cake meal and nuts then turn batter into prepared pan.
- Bake 40 minutes or until top is light brown and set then cool 30 minutes before adding syrup.
- To make syrup heat sugar, honey, orange juice, water, lemon juice and cinnamon over medium.
- Heat to dissolve sugar and simmer 10 minutes until mixture becomes syrupy then cool well.
- Pour syrup over cooled cake poking holes in cake with a fork to permit syrup to penetrate cake.
- Allow to stand 4 hours to absorb syrup and serve on muffin liners.
