Ingredients
  • 1 lb fresh baby spinach
  • 1/4 cup chopped onion
  • 1 clove garlic minced
  • 2 Tbs butter
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 1 pkg frozen puff paste thawed
  • 2 lb flounder filets

Directions
  1. Cook, spinach briefly, drain and pat dry
  2. Saute onions and garlic in butter.
  3. Stir in sour cream, salt, pepper and nutmeg
  4. Unfold pastry sheets on lightly floured surface.
  5. On one sheet, Place spinach, onions, garlic in middle of pastry
  6. Place flounder fillets on top
  7. Place second pastry sheet on top and bring corners together gently pressing to seal
  8. Place on baking sheet
  9. Bake in a 400F oven until golden brown about 40 minutes
  10. Cut into 6 servings and garnish with fresh dill

Oh yummmmm... and high "5" for a great recipe!


Lately, nothing works as well for me as spinach, especially baby spinach. Tonight will definitely be flounder night at the Crenshaw house. High 5, midge!
