Cornish Hens In Cherry Sauce Recipe

Ingredients
  • 2 thawed Cornish Game Hens
  • 1 (6 oz. ) package cornbread stove top stuffing
  • 1 1/2 cups water
  • 1/4 cup plus 2 T butter
  • 3/4 cup red currant jelly
  • 1/4 cup dried cherries, coarsely chopped
  • 2 t fresh lemon juice
  • 1/2 t salt
  • 1/4 t allspice

Directions
  1. Place rack in crock pot.
  2. In medium bowl, combine stuffing mix with seasoning packet, water and 1/4 cup of the butter (melted).
  3. Stuff hens and place on rack in crock pot.
  4. In a small saucepan, combine jelly, cherries, remaining 2 T butter, lemon juice, salt and allspice.
  5. Cook over low heat, stirring until jelly is melted.
  6. Reserve 2/3 cup sauce.
  7. Brush remaining sauce on hens in crockpot.
  8. Cover and cook on low for 6-8 hours.
  9. Spoon remaining sauce over hens at serving time.
