Hand Pies

- 1 - 21oz can apple pie filling, undrained and coarsly chopped shopping list
- 1 tart apple (we like Granny Smith) Cored and chopped - about 1 1/2 cups shopping list
- 1/2 cup raisins (or, crasins, chasins or blasins -- dried cranberries, cherries or blueberries) shopping list
- 1/2 c coarsly chopped walnuts or pecans (you know me and pecans) shopping list
- 2 tsp grated lemon peel - Fresh is best! shopping list
- 2 15oz pks All Ready pie crusts shopping list
- flour for work surface shopping list
- yolk of 1 large egg lightly beaten with 2 tsp water shopping list
- sugar as needed ( I like the the large crystal or raw sugar best) shopping list
- Creamy lemon Sauce -- (Gotta find that one, sorry, or use your own) shopping list
How to make it
- In a large bowl stir together apple pie filling, fresh apple, rasins (or cranberries, cherries or blueberries), walnuts and lemon peel.
- Set a side
- Unfold one pie crust onto lightly floured work surface
- Roll out to 11 inches round.
- Using a 4 1/2 inch plate as a guide, cut out 4 circles from crust, setting your scraps aside for decorations
- Repeat for each pie crust. You should have 16 circles.
- Work with 2 circles at a time. Refigerate remaining crusts between sheets of wax paper
- Place cant 1/2 c of filling in center
- Brush edges with egg yolk
- Place second circle on top. Streach crust as needed to meet edges, press firmly wiht fingers to seal.
- Carefully place on ungreased cookie sheet. ( I like to use parchment paper here)
- Decorate with scraps and sugar brush with egg yolk
- Refrigerate each pie when finished and chill all for 10 minutes.
- Heat oven to 400 degrees. Bake Pies 20 minutes until golden.
- Cool on wire racks.
