Ingredients
  • 1 - 21oz can apple pie filling, undrained and coarsly chopped
  • 1 tart apple (we like Granny Smith) Cored and chopped - about 1 1/2 cups
  • 1/2 cup raisins (or, crasins, chasins or blasins -- dried cranberries, cherries or blueberries)
  • 1/2 c coarsly chopped walnuts or pecans (you know me and pecans)
  • 2 tsp grated lemon peel - Fresh is best!
  • 2 15oz pks All Ready Pie Crusts
  • Flour for work surface
  • yolk of 1 large egg lightly beaten with 2 tsp water
  • Sugar as needed ( I like the the large crystal or raw sugar best)
  • Creamy Lemon Sauce -- (Gotta find that one, sorry, or use your own)

Directions
  1. In a large bowl stir together apple pie filling, fresh apple, rasins (or cranberries, cherries or blueberries), walnuts and lemon peel.
  2. Set a side
  3. Unfold one pie crust onto lightly floured work surface
  4. Roll out to 11 inches round.
  5. Using a 4 1/2 inch plate as a guide, cut out 4 circles from crust, setting your scraps aside for decorations
  6. Repeat for each pie crust. You should have 16 circles.
  7. Work with 2 circles at a time. Refigerate remaining crusts between sheets of wax paper
  8. Place cant 1/2 c of filling in center
  9. Brush edges with egg yolk
  10. Place second circle on top. Streach crust as needed to meet edges, press firmly wiht fingers to seal.
  11. Carefully place on ungreased cookie sheet. ( I like to use parchment paper here)
  12. Decorate with scraps and sugar brush with egg yolk
  13. Refrigerate each pie when finished and chill all for 10 minutes.
  14. Heat oven to 400 degrees. Bake Pies 20 minutes until golden.
  15. Cool on wire racks.
