How to make it

  • In a large bowl stir together apple pie filling, fresh apple, rasins (or cranberries, cherries or blueberries), walnuts and lemon peel.
  • Set a side
  • Unfold one pie crust onto lightly floured work surface
  • Roll out to 11 inches round.
  • Using a 4 1/2 inch plate as a guide, cut out 4 circles from crust, setting your scraps aside for decorations
  • Repeat for each pie crust. You should have 16 circles.
  • Work with 2 circles at a time. Refigerate remaining crusts between sheets of wax paper
  • Place cant 1/2 c of filling in center
  • Brush edges with egg yolk
  • Place second circle on top. Streach crust as needed to meet edges, press firmly wiht fingers to seal.
  • Carefully place on ungreased cookie sheet. ( I like to use parchment paper here)
  • Decorate with scraps and sugar brush with egg yolk
  • Refrigerate each pie when finished and chill all for 10 minutes.
  • Heat oven to 400 degrees. Bake Pies 20 minutes until golden.
  • Cool on wire racks.
