Ingredients

How to make it

  • Wash and chop all vegetables and place in large soup kettle
  • add broth to totally cover vegetables
  • add pepper
  • bring to boil and lower heat to simmer.
  • gently simmer covered pot about 60 minutes
  • add V8 juice and salt as needed
  • simmer another 15 to 20 minutes
  • add noodles and contiue cooking untill tender
  • Ladle into soup bowls and top with a dollop of sour cream.
  • Serve with hot crust rolls and plenty of butter
  • This soup is soul warming and wonderful to share with everyone who comes through the door. happy eating!!!

    One of the only good things about a New England winter is eating comfort food like this! Love the V8 addition, I never thought of that! Will be making this one for sure, definitely WITH the noodles (no turnips, though - maybe parsnips and/or butternut squash instead). Best of all, don't need to feel guilty about this one.

    I never put noodles in my veggie soup. This sounds interesting. It is getting soup weather. Although, truly I make soup all year long.
