My Favorite Vegetable Soup

- 2 lbs potatoes peeled and cubes shopping list
- 3 cps carrot coins shopping list
- 2 cps fresh or frozen green beans shopping list
- 2 cps frozen corn shopping list
- 2 cps chopped celery shopping list
- 1 cp chopped onion shopping list
- 2 tbs finely chopped garlic shopping list
- 2 cps sliced zuccini or summer squash shopping list
- 1 cp diced turnips shopping list
- 1 cp frozen peas shopping list
- 1 large can stewed tomatoes shopping list
- 1 small can chopped chilies shopping list
- 1/2 tsp pepper or to taste shopping list
- salt to taste shopping list
- 2 to 3 qts chicken broth or vegetable boulion shopping list
- 1 large can V8 juice shopping list
- 1 bag kluski or wide egg noodles shopping list
- salt to taste shopping list
- sour cream as garnish (optional) shopping list
How to make it
- Wash and chop all vegetables and place in large soup kettle
- add broth to totally cover vegetables
- add pepper
- bring to boil and lower heat to simmer.
- gently simmer covered pot about 60 minutes
- add V8 juice and salt as needed
- simmer another 15 to 20 minutes
- add noodles and contiue cooking untill tender
- Ladle into soup bowls and top with a dollop of sour cream.
- Serve with hot crust rolls and plenty of butter
- This soup is soul warming and wonderful to share with everyone who comes through the door. happy eating!!!
