  • 3 eggs
  • 1 1/2 cup sugar
  • 1 tsp vanilla extract
  • 250g - 1/4lb spinach, washed, drained
  • 1/2 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 1/2 cups flour, sifted
  • 1 tsp baking powder
  • 1 cup whipped cream
  • 3L Pyrex dish

Directions
  1. Puree the spinach in a food processor, put aside.(use some of the oil if necessary
  2. Whisk the egg and sugar in the mixer or by hand.
  3. Add the olive oil, lemon juice and pureed spinach and mix. T
  4. sift in the flour and baking powder.
  5. Mix for a few minutes.
  6. Pour into the oiled Pyrex.
  7. Preheat the oven to 375 F.
  8. bake for 30 min
  9. Check with a toothpick to see if it's done, bake until it comes out clean
  10. Let it cool down,
  11. then take it out of the Pyrex.
  12. Trim the sides about 1/2 inch wide,
  13. grind trimmings till crumbs, put
  14. Spread whipped cream on the top, sprinkle the crumbed cake on top of the cream.
  15. Slice it up and serve.
