Spinach Cake -ispanakli Kek

- 3 eggs shopping list
- 1 1/2 cup sugar shopping list
- 1 tsp vanilla extract shopping list
- 250g - 1/4lb spinach, washed, drained shopping list
- 1/2 cup extra virgin olive oil shopping list
- 2 tbsp lemon juice shopping list
- 2 1/2 cups flour, sifted shopping list
- 1 tsp baking powder shopping list
- 1 cup whipped cream shopping list
- 3L Pyrex dish shopping list
How to make it
- Puree the spinach in a food processor, put aside.(use some of the oil if necessary
- Whisk the egg and sugar in the mixer or by hand.
- Add the olive oil, lemon juice and pureed spinach and mix. T
- sift in the flour and baking powder.
- Mix for a few minutes.
- Pour into the oiled Pyrex.
- Preheat the oven to 375 F.
- bake for 30 min
- Check with a toothpick to see if it's done, bake until it comes out clean
- Let it cool down,
- then take it out of the Pyrex.
- Trim the sides about 1/2 inch wide,
- grind trimmings till crumbs, put
- Spread whipped cream on the top, sprinkle the crumbed cake on top of the cream.
- Slice it up and serve.
