This is a winter time favorite! MY absolute favorite cake to make and to eat (grins) Goes great with any dinner. morning time breakfast, snack etc...

Ingredients
  • 3 eggs
  • 1/2 oil
  • 1 c. butter
  • 2 c. sugar
  • 3 c. all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 3 cups copped apples
  • 1 1/2 cup chopped pecans
  • Topping:
  • 1 c. brown sugar
  • 1/2 c. milk
  • 1 stick margarine

Directions
  1. Mix eggs, salad oil, butter, and sugar and blend well
  2. Sift flour, salt, soda, add to egg mixture
  3. Add vanilla, choppe apples, nuts
  4. Pour into a greased 8-9 inch tube pan.
  5. Bake at 350 for 1 hour. While cake is still hot, pour hot topping over it in the pan and let cool.
  6. When completely cool, remove from pan
  7. **Directions for topping are to put ingred in small sauce pan and cook 2 1/2 min. Pour over hot cake.

Alterations


I did find it makes a big difference on what kind of margarine you use as well as brown sugar.I find using imperial tastes better and using lighter brown sugar.Thats just my taste buds for ya!
