Why-Didnt-I-Think-of-That Chicken Salad

Given out as samples at the local Trader Joe's recently. I did a "V8 head smack" & have been making it ever since. Both more flavorful and healthier than traditional chicken salad.
Ingredients
- leftover roast chicken, skinless, shredded or small chunks (or those precooked chicken strips, if you feel like being extravagant) shopping list
- hummus, any kind (my personal favorite is artichoke heart/kalamata olive, but original is wonderful too) shopping list
How to make it
- If using chicken strips, chop until pieces are small enough.
- Mix hummus into chicken until the proportions look right.
- Spread on crackers or bread.
- Enjoy.
