Diner Style Pork Chops And Gravy Recipe

Ingredients
  • 8 slices bacon,chopped
  • 4 bon-in rib or center cut pork chops
  • salt and pepper
  • 1 onion,halved and thinly sliced
  • 2Tbs flour
  • 11/2tsp ground fennel
  • 11/2tsp ground sage
  • 1/2c low-sodium chicken broth
  • 2c whole milk

Directions
  1. Cook bacon in large nonstick skillet over med-high heat till crisp,about 5 mins. Drain on paper towel lined plate;set aside Pour off all but 2Tbs bacon fat. Pat chops dry and season with salt and pepper. Cook chops in skillet till well browned and meat registers 145,about 5 mins a side. Transfer to serving platter and tent with foil.
  2. Add onion to skillet and cook,covered, until softened and browned,about 4 mins.. Stir in flour,fennel,sage and cook until flour is absorbed,about 1 min.. Whisk in broth and milk,then reduce heat to medium and simmer until sauce is thickened,about 8 mins. Stir in reserved bacon and any accumulated pork juices and season with salt and pepper. Pour gravy over chops. Serve
