How to make it

  • place grated zuchini into bowl with 1 tablespoon of salt, and let sit for 20 mins.
  • After 20 mins, squeeze moisture out of zuchini. Add all other ingredients and mix well.
  • Heat fry pan to medium heat, spooninto pan around 2 tablespoons of mixture into flat pattie shape, about 1cm in thickness and cook for 5-8 mins each side.
  • I keep cooked patties in a warm oven while cooking the batch.
  • Great served with chilli sauce or a tapas style mezze plate.
