Eggplant Rolatini

- 2 medium eggplants shopping list
- flour for dredging eggplant slices shopping list
- 2 beaten eggs shopping list
- olive oil for frying shopping list
- 1/2 pound mozzarella, shredded shopping list
- 1 pound ricotta cheese, mixed with 1 1/2 tablespoons parsley shopping list
- 2 cups marinara sauce shopping list
- Grated parmesan cheese (optional) shopping list
How to make it
- Wash, stem and peel eggplants.
- Slice eggplant lengthwise into thin strips
- Dredge strip in flour, dip into beaten egg and fry in skillet until golden brown.
- Preheat oven to 350 degrees F.
- Place a small amount of mozzarella at the wide end of an eggplant slice.
- Place small amount of ricotta mixture on top of the mozzarella cheese.
- Roll slices .
- Place seam-side down in a greased baking dish.
- Pour marinara sauce over the eggplant rolls in the baking dish.
- Bake for 20 to 30 minutes.
- Sprinkle with Parmesan, if desired.
