Ingredients

How to make it

  • Wash, stem and peel eggplants.
  • Slice eggplant lengthwise into thin strips
  • Dredge strip in flour, dip into beaten egg and fry in skillet until golden brown.
  • Preheat oven to 350 degrees F.
  • Place a small amount of mozzarella at the wide end of an eggplant slice.
  • Place small amount of ricotta mixture on top of the mozzarella cheese.
  • Roll slices .
  • Place seam-side down in a greased baking dish.
  • Pour marinara sauce over the eggplant rolls in the baking dish.
  • Bake for 20 to 30 minutes.
  • Sprinkle with Parmesan, if desired.
