Ingredients
  • 2 medium eggplants
  • Flour for dredging eggplant slices
  • 2 beaten eggs
  • Olive oil for frying
  • 1/2 pound mozzarella, shredded
  • 1 pound ricotta cheese, mixed with 1 1/2 tablespoons parsley
  • 2 cups marinara sauce
  • Grated Parmesan cheese (optional)

Directions
  1. Wash, stem and peel eggplants.
  2. Slice eggplant lengthwise into thin strips
  3. Dredge strip in flour, dip into beaten egg and fry in skillet until golden brown.
  4. Preheat oven to 350 degrees F.
  5. Place a small amount of mozzarella at the wide end of an eggplant slice.
  6. Place small amount of ricotta mixture on top of the mozzarella cheese.
  7. Roll slices .
  8. Place seam-side down in a greased baking dish.
  9. Pour marinara sauce over the eggplant rolls in the baking dish.
  10. Bake for 20 to 30 minutes.
  11. Sprinkle with Parmesan, if desired.

This is like a rolled eggplant parmesan. Should look really pretty! Added this to an eggplant group for ya. Great recipe!
