Coconut Bisque Recipe
This is an oldy but goody recipe. Makes a delicious frozen treat.

Ingredients
  • 3 Tablespoons quick-cooking tapioca
  • 2 cups milk
  • 1/2 cup sugar
  • 2 eggs, separated
  • 1 cup heavy cream, whipped
  • 1 Tablespoon lemon juice
  • 1 1/2 teaspoons vanilla
  • 1 cup moist coconut

Directions
  1. Add tapioca to milk, cook in double boiler 15 minutes or until tapioca is clear.
  2. Stir frequently and add 1/4 cup sugar during last few minutes of cooking.
  3. Press hot mixture through sieve and add to beaten egg yolks.
  4. Chill.
  5. Beat egg whites until nearly stiff, add salt and remaining 1/4 cup sugar, beat untl stiff and fold into cold tapioca mixture.
  6. Fold in whipped cream, lemon juice, vanilla and coconut.
  7. freeze until firm.
  8. Makes 1 1/2 quarts.

This sounds great, but I would suggest changing the name. A "bisque" is a classic french soup. Your recipe is a dessert, more specifically in the custard category.
