Roses Rice And Ricotta Pie Recipe
Rich, creamy, lemony dessert given with love from my best friend's mother, Rose. This makes about 4 pies so be careful unless you want to feed the neighborhood, which really isn't a bad idea anyway. This recipe can be cur in half or even thirds.

Ingredients
  • 3 cups white rice, cooked
  • 3 pounds part skim ricotta cheese
  • 2 cups sugar
  • 4 eggs
  • 1 cup milk
  • 1/2 cup raisins
  • 1 tablespoon lemon juice
  • 1 tablespoon vanilla extract
  • Whipped cream (optional but not reallyl)
  • Cinnamon for top of pie

Directions
  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients.
  3. Pour into well-buttered pie pans.
  4. Bake for 50 minutes or until sides brown.
  5. Sprinkle with ground cinnamon
  6. Serve topped with whipped cream (see? told ya it wasn't really optional!)
  7. Sprinkle with added cinnamon, if desired.
