Potato Stuffing Casserole Recipe
This is a great way to use the leftover mashed potatoes! We love it.

Ingredients
  • 1/4 cup celery, chopped
  • 1 onion, chopped
  • 4 tablespoons butter or margarine, divided
  • 3 slices bread, cubed
  • 4 to 5 large potatoes, peeled, cooked and mashed
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup hot milk
  • 1 egg, beaten
  • Additional parsley

Directions
  1. In a 12-inch skillet, saute celery and onion in 2 tablespoons of butter until tender.
  2. Add bread cubes and stir until lightly browned. Stir in potatoes, parsley, salt, pepper, milk and egg; mix well.
  3. Spoon into a greased 1-1/2 quart baking dish.
  4. Dot with remaining butter.
  5. Bake at 350 degrees, uncovered, for 30 to 40 minutes or until lightly browned.
  6. Garnish with additional parsley.
