Jewel Cookies Recipe
These nutty thumbprint cookies are a great addition to holiday cookie platters. I like to make them using several different flavors of jam. Apricot and blackberry are 2 of my favorites.

Ingredients
  • 1 cup butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs ; separated
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup pecans ; chopped
  • 1/2 cup jam

Directions
  1. In a large bowl combine butter, brown sugar, vanilla and egg yolk.
  2. In a small bowl, mix flour and salt.
  3. Stir flour into butter mixture until all the flour is mixed in.
  4. Form dough into 48 equal size balls.
  5. Finely chop pecans.
  6. Dip each ball into egg white then roll in pecans.
  7. Place on lightly greased cookie sheet and press thumb deeply into the center of each cookie.
  8. Bake in preheated 350F oven for 10 to 12 min. or until cookies are lightly browned.
  9. Fill each cookie with 1/2 teaspoon of Jam.
  10. Cool and serve.

I totally forgot to review these!!!I am sooo sorry! I made these for my Christmas cookie platters and they were excellent....very rich and delicious! I used strawberry and apricot preserves.
