This is an incredibly moist and incredibly tasty bread that is great for breakfast, brunch or at lunch with a nice fruit salad. Enjoy

Ingredients
  • 1/4 cup butter
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 cup orange juice
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup dried apricots chopped
  • 1 cup raisins
  • 1/2 cup pecans coarsely chopped
  • 1 tablespoon orange zest
  • 3 tablespoons apricot jam
  • 1 tablespoon water

Directions
  1. Whisk together flour, baking powder and salt then stir in apricots, raisins, nuts and rind.
  2. In large bowl beat together butter, sugar and 1 egg until smooth then beat in second egg.
  3. Blend in orange juice then pour in flour mixture all at once and stir just to moisten.
  4. Scrape into greased loaf pan then bake at 350 for 1 hour.
  5. Allow to stand 10 minutes then remove loaf from pan.
  6. Stir apricot jam and water together and heat then put through strainer.
  7. Spoon glaze over hot loaf then cool on wire rack.
