How to make it

  • Whisk together flour, baking powder and salt then stir in apricots, raisins, nuts and rind.
  • In large bowl beat together butter, sugar and 1 egg until smooth then beat in second egg.
  • Blend in orange juice then pour in flour mixture all at once and stir just to moisten.
  • Scrape into greased loaf pan then bake at 350 for 1 hour.
  • Allow to stand 10 minutes then remove loaf from pan.
  • Stir apricot jam and water together and heat then put through strainer.
  • Spoon glaze over hot loaf then cool on wire rack.
