Apricot Raisin Loaf

- 1/4 cup butter shopping list
- 3/4 cup packed brown sugar shopping list
- 2 eggs shopping list
- 1 cup orange juice shopping list
- 2 cups all purpose flour shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 1 cup dried apricots chopped shopping list
- 1 cup raisins shopping list
- 1/2 cup pecans coarsely chopped shopping list
- 1 tablespoon orange zest shopping list
- 3 tablespoons apricot jam shopping list
- 1 tablespoon water shopping list
How to make it
- Whisk together flour, baking powder and salt then stir in apricots, raisins, nuts and rind.
- In large bowl beat together butter, sugar and 1 egg until smooth then beat in second egg.
- Blend in orange juice then pour in flour mixture all at once and stir just to moisten.
- Scrape into greased loaf pan then bake at 350 for 1 hour.
- Allow to stand 10 minutes then remove loaf from pan.
- Stir apricot jam and water together and heat then put through strainer.
- Spoon glaze over hot loaf then cool on wire rack.
