How to make it

  • Preheat broiler to high.
  • In a saucepan reduce the orange juice by half over high heat.
  • Add butter, 2 tablespoons of the olive oil, salt and pepper then blend well with a wire whisk.
  • Add tomatoes and set aside.
  • Brush fish on both sides with the remaining olive oil.
  • Sprinkle with salt and pepper and arrange fish in an unheated broiler pan.
  • Broil fish 3 inches from the heat source for 4 minutes.
  • Transfer fillets to a platter and pour the orange sauce over them and garnish with chives.
