Broiled Red Snapper with Orange Butter Sauce

- 1/4 cup fresh orange juice shopping list
- 1 tablespoon butter shopping list
- 3 tablespoons olive oil shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/2 cup diced peeled seeded plum tomatoes shopping list
- 1-1/2 pounds skinless red snapper shopping list
- 1/4 cup chopped fresh chives shopping list
How to make it
- Preheat broiler to high.
- In a saucepan reduce the orange juice by half over high heat.
- Add butter, 2 tablespoons of the olive oil, salt and pepper then blend well with a wire whisk.
- Add tomatoes and set aside.
- Brush fish on both sides with the remaining olive oil.
- Sprinkle with salt and pepper and arrange fish in an unheated broiler pan.
- Broil fish 3 inches from the heat source for 4 minutes.
- Transfer fillets to a platter and pour the orange sauce over them and garnish with chives.
