Broiled Red Snapper With Orange Butter Sauce Recipe

Ingredients
  • 1/4 cup fresh orange juice
  • 1 tablespoon butter
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup diced peeled seeded plum tomatoes
  • 1-1/2 pounds skinless red snapper
  • 1/4 cup chopped fresh chives

Directions
  1. Preheat broiler to high.
  2. In a saucepan reduce the orange juice by half over high heat.
  3. Add butter, 2 tablespoons of the olive oil, salt and pepper then blend well with a wire whisk.
  4. Add tomatoes and set aside.
  5. Brush fish on both sides with the remaining olive oil.
  6. Sprinkle with salt and pepper and arrange fish in an unheated broiler pan.
  7. Broil fish 3 inches from the heat source for 4 minutes.
  8. Transfer fillets to a platter and pour the orange sauce over them and garnish with chives.
