Raisin Rosemary Muffins

- 3/4 cup buttermilk shopping list
- 1/2 cup golden raisins shopping list
- 1 teaspoon rosemary leaves, crushed shopping list
- 1/2 stick butter shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1/2 cup sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1 large egg shopping list
How to make it
- Preheat oven to 350 degrees F.
- Spray muffin pan with non-stick cooking spray.
- Combine milk, raisins and rosemary in a saucepan.
- Bring to a boil.
- Reduce heat.
- Simmer for 2 minutes.
- Melt the butter in the milk mixture.
- Place saucepan in cold water to cool.
- Combine flour, sugar, baking powder and salt.
- Mix well.
- Whisk the egg into the milk mixture.
- Pour over dry ingredients.
- Mix until batter is just moistened.
- Ladle into prepared muffin pan.
- Bake for 20 to 25 minutes.
- Remove from oven.
- Cool 10 minutes in pan.
- Remove from pan.
- Cool completely.
