How to make it

  • Preheat oven to 350 degrees F.
  • Spray muffin pan with non-stick cooking spray.
  • Combine milk, raisins and rosemary in a saucepan.
  • Bring to a boil.
  • Reduce heat.
  • Simmer for 2 minutes.
  • Melt the butter in the milk mixture.
  • Place saucepan in cold water to cool.
  • Combine flour, sugar, baking powder and salt.
  • Mix well.
  • Whisk the egg into the milk mixture.
  • Pour over dry ingredients.
  • Mix until batter is just moistened.
  • Ladle into prepared muffin pan.
  • Bake for 20 to 25 minutes.
  • Remove from oven.
  • Cool 10 minutes in pan.
  • Remove from pan.
  • Cool completely.
