Ingredients
  • 4 English Muffins
  • 1 lb sausage - sauteed & drained
  • 8 eggs
  • 8 oz sour cream
  • 2 small cans green chilis
  • 16 oz co;by cheese - montery jack cheese
  • salt & pepper to taste

Directions
  1. Butter english mugffins & put butter side down in bottom of large casserole.
  2. Mix: sausage, slightly beaten eggs, sour cream, salt & pepper (to taste)
  3. Pour over muffins
  4. Cover with shredded cheeses
  5. Sprinkle chilis over all
  6. Wrap tightly with foil & refrigerate over night
  7. Bake 1 hour at 350
  8. Serve with salsa

This is a good casserole with the english muffins. They stand up to the custard better than bread or toast. A good sturdy base that tastes great.
