Mexican Breakfast

- 4 English muffins shopping list
- 1 lb sausage - sauteed & drained shopping list
- 8 eggs shopping list
- 8 oz sour cream shopping list
- 2 small cans green chilis shopping list
- 16 oz co;by cheese - montery jack cheese shopping list
- salt & pepper to taste shopping list
How to make it
- Butter english mugffins & put butter side down in bottom of large casserole.
- Mix: sausage, slightly beaten eggs, sour cream, salt & pepper (to taste)
- Pour over muffins
- Cover with shredded cheeses
- Sprinkle chilis over all
- Wrap tightly with foil & refrigerate over night
- Bake 1 hour at 350
- Serve with salsa

This is a good casserole with the english muffins. They stand up to the custard better than bread or toast. A good sturdy base that tastes great.
