Rhubarb Or Apple Muffins

- Muffin batter: shopping list
- 1¼ cup brown sugar shopping list
- ½ cup vegetable oil shopping list
- 1 egg shopping list
- 2 teaspoons vanilla extract shopping list
- 1 cup buttermilk shopping list
- 2½ cups flour shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- ½ teaspoon salt shopping list
- 1½ cups diced rhubarb or apples (any moist fruit will work) shopping list
- Topping: shopping list
- 1/3 cup sugar shopping list
- 1½ teaspoons cinnamon shopping list
- 1 tablespoon melted butter shopping list
How to make it
- For the muffins, combine brown sugar, oil, egg and vanilla; beat until well blended.
- Beat in buttermilk, then flour, baking powder, baking soda and salt.
- Stir in rhubarb or apples by hand.
- Pour batter into greased muffin tins, about 3/4 full; sprinkle with topping before baking.
- For the topping, blend together the sugar and cinnamon; use a fork to blend in the melted butter; sprinkle over batter.
- Bake muffins at 400 degrees for about 20 minutes.
- Serving amount will depend on what size muffin tins you use.
