Ripe Olive And Cheese Balls Recipe
A small ice cream or truffle scoop is almost a necessity when making these balls. It's easier to have the mixture a bit on the cold side to aid rolling.

Ingredients
  • 8 ounces cream cheese, softened
  • 4 1/2 ounces ripe olives, chopped
  • 1/2 cup fresh parsley. chopped
  • 1/2 cup walnuts, chopped
  • 24 thin pretzel sticks

Directions
  1. Combine cream cheese and ripe olives together well.
  2. Combine chopped parsley and chopped walnuts together well.
  3. Refrigerate for 20 minutes.
  4. Form olive mixture into 1" balls.
  5. JUST BEFORE SERVING ~ ~ ~
  6. Roll cheese balls in parsley/nut mixture.
  7. Spear with pretzel sticks.
  8. Serve.
