Wild Rice And Oyster Casserole Recipe
This is an old recipe I found of my Grandmother's. She was 72 when she passed 15 years ago. She was a great Southern Cook.

Ingredients
  • 1 - 2 ounce container oysters
  • 1 - 6 ounce package wild rice
  • In a pinch you could use the 5 minute quick cook wild rice
  • 1- cup fresh sliced mushrooms
  • 1 - cup diced celery
  • 2- tablespoons melted butter
  • 2- tablespoons flour (all purpose)
  • 1/2 a cup of half and half
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon dry sherry
  • 2 - tablespoons fine breadcrumbs
  • If you can get fresh oysters
  • 12 cleaned and shucked is the ticket !

Directions
  1. Drain oysters reserving 1/4 cup of the oyster broth.
  2. Cook rice according to directions, set aside. Saute mushrooms and celery in butter, add the oysters and cook for 5 minutes, until edges curl up. Add flour, cook flour 1 minute, add the half and half and reserved broth. Stir until smooth. Add wild rice to oyster mixture, stir well to combine. Put mixture into a greased baking dish. Sprinkle with breadcrumbs
  3. Bake 350 degree oven for 30 minutes

I omitted the rice because I do not like rice and the casserole was still delicious!
