Dry Chicken Is Not For Dinner Recipe
One of my hubby's favorite dishes I make, I serve it with brown rice, and usually green beans or asparagus.. The sauce is really yummy on veggies and rice and also garlic mashed pots...The sauce is SO yummy you may want to double it!!! enjoy!

Ingredients
  • 4 chicken breasts trimmed of fat
  • 1 can of chicken broth
  • 1 garlic clove
  • 1/4 c minced onion
  • 1/4c minced carrot
  • 1 package (roll) of herbed goat cheese
  • 2 tablespoons extra virgin olive oil
  • 1/2-1c heavy cream (depending on how creamy you want it)
  • 1/2c brandy
  • Flour to coat chicken
  • salt & pepper for flour
  • garlic powder for flour

Directions
  1. Coat chicken in flour
  2. Brown chicken in oil until both sides have color
  3. Pour 3/4 of can of broth into pan w/ chicken
  4. add onions, carrots, and garlic
  5. Put stove to low heat cover and simmer for 45-60 minutes until chicken in cooked through.
  6. While chicken is cooking put cheese into bowl and thin out with some of the cream and rest of broth. Set aside.
  7. After chicken in cooked, remove from pan and cover with foil to keep warm.
  8. Turn up heat and add cheese mixture and whisk until it is combined.
  9. Remove pan from stove and add brandy (use CAUTION it may ignite)
  10. Return to stove and simmer for about 5 minutes
  11. Add chicken back to pan coat with sauce and cook for another 5 minutes.
  12. ***If sauce is too thin reduce to desired consistancy or add a little corn starch slurry to thicken***
