A flavorful blend of sausage, chili beans, tomatoes and other tasty vegetables, heated and served over Fritos or Doritos. My kids always loved this. It is very filling and easy to make on a busy day.

Ingredients
  • 1-1/2 lb. spicy sausage
  • ¼ cup chopped celery
  • ¼ cup minced onion
  • 1 sliced green pepper
  • 2 cans chili beans
  • 1 can slice mushrooms
  • 1 can stewed tomatoes
  • salt and pepper to taste
  • Fritoes or Doritos

Directions
  1. Fry sausage, pour off excess grease, except for 2 tbsp.
  2. Saute celery, onion, green pepper and mushrooms in remaining grease.
  3. Add sausage and chili beans to sautéed vegetables.
  4. After above is heated through, add stewed tomatoes.
  5. Thicken mixture with cornstarch or flour.
  6. Add salt and pepper to taste.
  7. Serve over Fritos or Doritos
