Mommas Autumnal Orzo

- 2/3 c uncooked orzo pasta shopping list
- 1 granny smith apple or about 1/3 can fried apples shopping list
- 1/3 c chopped pecans or walnuts, whatever your preference shopping list
- 1/3 c dried cranberries shopping list
- 1/2 tsp vanilla extract shopping list
- 1/2 tsp cinnamon shopping list
- 2 tbsp sweetened condensed milk shopping list
- Pinch herbs d provence shopping list
- water for boiling shopping list
- salt to taste shopping list
- Additional ingredients if frying apples: shopping list
- 1-2 tbsp butter shopping list
- Pinch of brown sugar shopping list
- Pinch of cinnamon shopping list
- salt to taste shopping list
How to make it
- Cook orzo according to package directions. Strain and rinse with warm water.
- Meanwhile, peal and chop apple into even, bite sized cubes if using.
- Melt butter in a heavy skillet over medium high heat and add apples, brown sugar, cinnamon, and salt to taste. Fry apples 15-20 minutes or until they reach desired doneness (I find they work better if still slightly crisp in the center).
- Gently toss apples, cranberries, and nuts with cooked orzo.
- Combine cinnamon, herbs d provence, condensed sweetened milk, and vanilla extract. Pour over pasta mixture and toss lightly to coat.
- Enjoy warm or room temperature.
