Delightful quiche.. no crust-making involved in this one. Takes some time, but is worth the effort you put into it. Makes TWO 10" pies.

Ingredients
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 1/2 cups small curd-cottage cheese OR ricotta cheese
  • 1 teaspoon Dijon mustard
  • 9 large eggs
  • 11 ounces cream cheese, softened
  • 3/4 pound Jarlsberg cheese, grated
  • 1/3 cup grated Parmesan cheese

Directions
  1. Melt butter in a saucepan.
  2. Whisk in the flour off the heat.
  3. Whisk until well combined.
  4. Preheat oven to 350 degrees F.
  5. Gradually add milk, whisking until all milk is added.
  6. Cook and stir until medium thickness is reached.
  7. Set aside.
  8. Combine the baking powder, mustard and salt with the cottage cheese.
  9. Beat in the cream sauce.
  10. Fold Jarlsberg and Parmesan cheeses into mixture.
  11. Pour mixture into two 10" buttered pie plates.
  12. Bake for 45 minutes OR until puffed and browned.
