How to make it

  • If you have several people - write their name on the outside of a ziplock bag.
  • Take a quart size ziplock freezer bag and crack 2 eggs.
  • Put a variety of ingredients in that you want in your omelet such as cheese, ham, onion, green peppers, tomatoes, hash brown, salsa, etc. - any or all.
  • Seal the bag and shake, smush to combine ingredients. (This is especially fun for little ones to make their "own" omelet)
  • Seal the bag taking care to get all of the air out of the bag and reseal.
  • Place the bags into rolling, boiling water for exactly 13 minutes.
  • You can usually cook 6 - 8 omelets in a large pot.
  • Open the bags and the omelet will roll out easily .... perfectly .... every time!

Really??!! This would get us out the door more quickly in the mornings and I can't even begin to tell you how it would simplify breakfast when camping. I just looked up how to freeze eggs and I am going to set up premade omelets in the freezer. I am almost ridiculously excited. :-)

This is a wonderful recipe. I use it at our annual Christmas brunch & it never fails. Always a really delicious, fluffy omelet & everyone's is ready at the same time. Perfect choice for a breakfast crowd, plus everyone thinks your so clever.
