My Italian Friend-apostrophe-s Zucchini

- 1 lb zucchini shopping list
- 1 T butter shopping list
- 1 c parmesan cheese, freshly grated if possible shopping list
- salt to taste shopping list
How to make it
- Shred zucchini finely, preferably in a food processor.
- Saute with 1 T butter in a large skillet over a medium hot flame, stirring until all the zucchini shreds have turned a pretty bright green. Keep cooking and stirring until the shreds have collapsed and extra liquid has cooked away.
- Stir in the grated cheese and cook for another minute or so, until melted.
- Salt to taste.
