How to make it

  • Shred zucchini finely, preferably in a food processor.
  • Saute with 1 T butter in a large skillet over a medium hot flame, stirring until all the zucchini shreds have turned a pretty bright green. Keep cooking and stirring until the shreds have collapsed and extra liquid has cooked away.
  • Stir in the grated cheese and cook for another minute or so, until melted.
  • Salt to taste.
