This cake was a disaster from the beginning. It was so dry it could not mix together, nor be"poured" into anything. I took half the recipe and baked it at 350, which was a guess. Took the other half, added milk, an egg, and more baking soda. First "cake " came out like a brick, second came out like a spongy brick. Not sure what I did wrong, but this cake was inedible.

Surely that was not enough milk it was like a sand pit to mix!
Also no temperature for the oven!!!
We are waiting now for it to cook.
    This is my first cake....

I found this looking for something gluten free to replace my typical Easter Carrot cake, thinking that I could doctor the cake up with carrots and frosting. I just made a test version, following the recipe, and it was actually really good. I do good quality bulk ingredients, and I think that helps, but it rose, had an acceptable crumb, but I think it could use a little less sugar, since the rice flour is kind of sweet.

I've just tasted this cake! Delicious! I've substitute the sugar with half agave nectar and half grape juice as a natural sweetener. I also added a chopped apple and raisins in the batter. Thanks so much for this recipe! It's very easy to make and can be made in so many variations:)
