How to make it

  • Preheat oven to 425 degrees F.
  • Peel, core and halve the pears.
  • Melt butter in 8 or 9" cast iron skillet.
  • Arrange pears on top of butter in skillet, cut-side up, wide end at rim.
  • Sprinkle pears with cinnamon.
  • Cook without stirring over medium heat until sugar caramelizes.
  • Cool completely in skillet.
  • Roll pie crust into an 11" round.
  • Arrange crust over pears making sure to tuck edges around fruit well.
  • Bake in the middle of the oven for 30 to 35 minutes.
  • Remove from oven.
  • IMMEDIATELY turn onto serving plate.
  • Garnish with leftover pears.
  • Serve with whipped cream dollops and/or ice cream.

    It is a delightful recipe, lin, except for tunring it out onto the plate. Cast iron is soooo heavy. Glad you like it. Thanks for the 5.
