Chickpea Salad

- 1 can chickpeas, drained & rinsed shopping list
- 1-2 tomatoes, cubed shopping list
- 1 small red onion, sliced/chopped shopping list
- 1 sweet pepper (red, orange, yellow), chopped shopping list
- Other veggie suggestions (use any or all): shopping list
- broccoli, corn, cucumbers, celery, baby spinach, zucchini, carrots, beets, mushrooms shopping list

- Dressing (this is what makes it SOOO tasty!!): shopping list
- 2 tbsp extra virgin olive oil shopping list
- 1 tbsp balsamic vinegar shopping list
- 1 tbsp lemon juice shopping list
- 1-2 cloves garlic, crushed (add more for extra garlickyness) shopping list
- 1 tbsp ground flax seed shopping list
- 1 tbsp basil shopping list
How to make it
- Combine all the salad ingredients into a large bowl.
- In a small bowl or dressing shaker, combine dressing ingredients and mix well. Immediately pour over salad and toss to ensure it's evenly covered.
- Serve immediately, or cover and refrigerate.
