How to make it

  • Heat toaster oven to 400 F.
  • Butter two 3 1/2 - inch ramekins and dust with sugar.
  • Whisk egg until frothy and add sugar, half and half and vanilla extract; mix to combine.
  • Add the all purpose flour and whisk very well.
  • Divide the raspberries into the ramekins and pour the batter over the raspberries.
  • Bake for 8 - 10 minutes untilgolden brown and the middle is set.
  • Serve immediately
  • Serve with a scoop of ice cream. (optional)

    Its always fun for me to find a recipe where I can use my toaster oven. This made up pretty quickly but mine took 18 minutes in my little oven. Could be the oven. It was hard to eat this immediately. I had to let it sit for about 15 minutes or so. It was hot! No ice cream here. I think a little sprinkling of powdered sugar might be nice. I added a couple of pictures and put this in IMI on 8/24/14.
