Ingredients

How to make it

  • Melt butter in soup pot.
  • Whisk in the flour.
  • Whisk until well incorporated.
  • Gradually whisk in the milk.
  • Simmer to consistency of a white sauce.
  • Add the potatoes and scallions to the soup.
  • Simmer for 10 minutes, stirring occasionally.
  • Add the crumbled bacon, cheese, sour cream and salt & pepper.
  • Stir well.
  • Heat on low until cheese melts.

    We usually just bake the number of potatoes needed for the meal also, knox. After getting this recipe,it wasn't hard to remember to add more "for the soup"! Thanks for your rating and for being my friend. Have a wonderful Thanksgiving!

    Good googly moogly! I have never *had* any leftover baked taters, but this is so similar to my loaded potato soup---might just be worth a try at baking them! Next time you make this, throw a bowl up my way!--Kn0x--

    Good heavens, this soup sounds so good. I wish I had a bowl of this luscious comfort right now. There's something so appealing about hearty soup on a chilly day. I love loaded baked potatoes - so morphing it into a soup really makes me smile. And it makes my tummy growl. *Grrrrr* ... see. Hehe...thank GF - high 5! :) Vickie
