A creamy potato soup recipe given by a former co-worker, Paddy McGahan. A lovely soup. It's the answer to the question what-to-do-with-leftover-baked-(or boiled for that matter)potatoes. It IS infintely better with baked potatoes!

Good heavens, this soup sounds so good. I wish I had a bowl of this luscious comfort right now. There's something so appealing about hearty soup on a chilly day. I love loaded baked potatoes - so morphing it into a soup really makes me smile. And it makes my tummy growl. *Grrrrr* ... see. Hehe...thank GF - high 5! :) Vickie

We usually just bake the number of potatoes needed for the meal also, knox. After getting this recipe,it wasn't hard to remember to add more "for the soup"! Thanks for your rating and for being my friend. Have a wonderful Thanksgiving!
