This is a basic zucchini sweet bread. A perfect way to put a dent in that bumper crop. Freezes really well. My grandmother used to sell this in her bakery in Vermont.

Great recipe. I made it a couple of times last week. Gave a loaf to my dad for his b-day. I found that it didn't take a whole hour for sure. I almost burnt them! About 40 mins in my oven. Plus a metal pan cooks faster. :)

I'm looking for a chocolate zuchini bread, do you think I could just add 1/4 cup cocoa powder and omit 2 or 3 tablespoons flour? I'm a darn good cook, lousy baker (but have 4 boys, so...)

Sure you can add 1/4c cocoa powder, since the bread is so moist you probably wouldn't need to reduce the flour. You could also add 1/4c of chocolate chips in addition to the cocoa. Good luck let me know how it works out!
