chorizo chilequiles

- 4 eggs shopping list
- 1/2 tube of soft chorizo(casing removed)(find this in the mexican deli section) it usually comes in a long thick tube, comes in pork or beef, i find pork is better. shopping list
- 1/3 of small yellow onion chopped shopping list
- 4 tortillas cut in cubes shopping list
- good pinch of crushed red pepper shopping list
- salt and pepper to taste shopping list
- vegetable oil shopping list
How to make it
- in a saucepan, add about 2 tbs of veg oil, when hot add tortilla pieces and cook until golden brown. drain on paper towels. In same pan add a 1 tbs of veg oil and chorizo, with spoon seperate chorizo very well until crumbly looking and add crushed red peppers, fry chorizo stirring frequently until it looks darker. it is important to cook all the way. once cooked all the way, add tortila pieces back and stir. Whisk eggs together in bowl and add to pan, stiring frequently. add salt and pepper to taste. Once eggs have set, remove from heat and serve. I like to serve this with fresh refried beans! mmmm enjoy!
