Ingredients
  • 1 Whole Chicken dressed into pieces (around 3 lbs.)
  • 1/3 + cup Flour
  • Salt, pepper and poultry seasoning to taste
  • 1/2 cup Beer
  • Oil for browning
  • 1 Small onion sliced into rings
  • 8 – 20 cloves of garlic whole and depapered
  • 4 carrots peeled and cut in thirds
  • 4 red potatoes quartered
  • 1/2 cup broth or beer or a little of both
  • More salt, pepper and poultry seasoning to taste

Directions
  1. Mix together 1/3 cup flour, salt pepper and seasoning.
  2. Rinse chicken and dust in flour.
  3. Quickly dip dusted chicken pieces in beer and dust again (the double dip). If there is an objection to beer 1 ounce of balsamic vinegar to three ounces water is a great substitute.
  4. Brown the chicken in the oil then set aside.
  5. Deglaze the pan with the broth, beer or a little of both. This isn’t a lot of liquid so be careful not to reduce it.
  6. In a 4 quart (5 or 6 is better) crockpot layer the onions, garlic, carrots and tatters. Poor the drippings over veggies and then add the chicken.
  7. Set to low and cook for 6 – 8 hours. Meat is done at 180*F but can tolerate extra cooking time.
