Lemon Spinach Rice Recipe

A light rice side dish, bursting with flavour, that goes great with any light meat such as chicken or fish. Especially good with Grilled Chicken with Dijon Sauce.

Ingredients
- 1 Tbsp butter
- 1 small onion, diced
- 1 cup converted rice (not instant)
- 2 1/4 cups chicken broth or water
- 2 cups baby spinach leaves, packed and coarsely chopped
- 1 Tbsp fresh lemon juice
- 2 tsp grated lemon zest
Directions
- Melt butter in large saucepan over medium heat. Add onion and saute 2 to 3 minutes or until onion is translucent.
- Add rice and cook, stirring constantly, for 1 minute.
- Stir in broth' bring to a boil. Cover, reduce heat and simmer for 20 minutes.
- Add spinach to rice and stir. Cover and continue to simmer for 5 minutes. Remove from heat; stir in lemon juice and rind.
- Also great served cold!

Well, Crystal, I didn't have this 4 days ago, but I did tonight. It was just as I expected......delish! I don't know why I haven't thought to make this combination, having cooked for so many years. DH and I made piggies of ourselves. Thanks again.
