How to make it

  • Pre-heat oven to 350 degrees. Lightly grease a 9 inch pie plate or quiche dish
  • In a large bowl, stir together the eggs, ricotta, cream cheese, parmesan & pepper until smooth
  • Stir in the mozzarella & 1/4 cup of the artichoke marinade
  • Coursely chop the artichoke hearts
  • Add to the cheese mixture with the chickpeas, olives, pimentoes & parsley & stir to mix
  • Scrape evenly into prepared pie plate
  • Bake for 45 mins or until set & golden
  • Let stand for 10 mins & then slice into 8 wedges to serve

  • NOTE:-
  • Other flavors of cream cheese can be used for a variety of flavors.
  • To reduce the calories, 4 egg whites can be used in place of the whole eggs & light or reduced fat cheeses can be used.
