Ingredients
  • 3 eggs - lightly beaten
  • 1 cup ricotta cheese
  • 4 ozs smoked garlic cream cheese - softened
  • 1/3 cup freshly grated parmesan cheese
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded mozzarella cheese
  • 1 jar (14 ozs) marinated artichoke hearts - Drained, reserving the marinade
  • 3/4 cup canned chickpeas, rinsed, drained & coursley chopped
  • 1 can (2 1/2 ozs) black olives - drained
  • 1 jar (2 ozs) pimentoes - drained
  • 1/4 cup chopped fresh parsley

Directions
  1. Pre-heat oven to 350 degrees. Lightly grease a 9 inch pie plate or quiche dish
  2. In a large bowl, stir together the eggs, ricotta, cream cheese, parmesan & pepper until smooth
  3. Stir in the mozzarella & 1/4 cup of the artichoke marinade
  4. Coursely chop the artichoke hearts
  5. Add to the cheese mixture with the chickpeas, olives, pimentoes & parsley & stir to mix
  6. Scrape evenly into prepared pie plate
  7. Bake for 45 mins or until set & golden
  8. Let stand for 10 mins & then slice into 8 wedges to serve
  9. .
  10. NOTE:-
  11. Other flavors of cream cheese can be used for a variety of flavors.
  12. To reduce the calories, 4 egg whites can be used in place of the whole eggs & light or reduced fat cheeses can be used.
